Therefore, investigation of a peeling and shelling mechanism for farmer to produce coffee bean right after harvesting in order to increase their profit was the main goal of this study. A steel plate was used to replace the die casting in the commercial mechanism in this study to modify the peeling and shelling. Experimental results indicated that shelling could reach 73.25% and damage rate was 9.81% at the conditions of rotation rate of 2685RPM and clearances of upper and lower part to be 10 and 9 mm respectively for the coffee bean with moisture content of 50%; shelling could reach 61.5% and damage rate was 1.76% at the conditions of rotation rate of 2388RPM and clearances of upper and lower part to be 9 and 8 mm respectively for the coffee bean with moisture content of 40%.Therefore, adjusting moisture of coffee bean to a proper level prior processing could achieve peeling and shelling effectively with the developed mechanism.
