Summary:碩士 === 朝陽科技大學 === 生化科技研究所碩士班 === 99 === Chitosan of molecular size between 500,000 ~ 1,000,000, with a degree of deacetylation between 70 ~ 95%, can be dissolved in 2%(w/v) organic acids such as, acetic acid, maleic acid, lactic acid, succinic acid and ascorbic acid. Transparent gels of various rigidities can be formed by adding alkali in to chitosan solution. This research studied the use of six types of organic acids in forming chitosan gels: citric acid (CA), oxalic acid (OA), succinic acid (SA), tartaric acid (TA) and propionic acid (PA), opaque gels were formed. Mixing in acetic acid at 27
