Based on the research finding, we expected to provide the improving strategies to advance the “Meatless Day”. This research is in the form of questionnaires, with self-written “The questionnaire of the pupils’ cognition and satisfaction at Meatless Day”. The data collected by simple randomized sampling of junior high school students (from grade 7 to grade 9) in Pintung County Fang Liao Junior High School. There are 428 effective samples and the statistic analysis performed were descriptive statistics、one-way ANOVA、Pearson correlation analysis and Spearman’s. The main findings for this study were: 1. The pupils think that “Meatless Day” can not only save the earth but be great helpful for health. 2. The pupils think that people won’t be innutritious but can keep their spirit in peace and stable as long as they have balanced diet. 3. The genders in cognition are not different, but the grades are. It shows that some grades need to be enhance the realization on “Meatless Day”. The pupils are satisfied with the taste、 quantities、the freshness of food and soup, but not with arrangement of menu. It means that the looks of the dishes could be better. 4. The genders didn’t affect the satisfaction and there is no difference between grades. It shows that no matter which grade is getting the same feeling to the meals on meatless day. 5. The genders do not affect satisfaction, and no difference in grades on satisfaction also shows that no matter which grade, provided by the school meals without meat at the same attention, so we feel the same. 6. The higher cognition is, the higher satisfaction is. 7. Encourage more to make pupils realize the nutrition and importance of vegetables and fruit. As the result, the acceptance will be higher and the pupils will be healthier as well. Chien-Zer Liu 劉健哲 2011 學位論文 ; thesis 66 zh-TW
