Investigation Effect of Liquid Arenga Sugar’s Evaporation Temperature under Vacuum Pressure
The use of high temperatures in conventional liquid arenga sugar processing can trigger the Maillard reaction, which causes some of the nutritional content of liquid arenga sugar to decrease.
