Assessment of consumer properties of small-fruited varieties of pepper

The results of the study of small-fruited varieties of pepper on the biochemical parameters of fruits are presented. Varieties with a high content of dry substances, ascorbic acid, carotenoids and lycopene for fresh consumption and processed into functional products have been selected.
