Summary:The goal of this paper is to comprehend the “strategizing” related to tourism policy in the state of Espírito Santo, on a syndicate and enterprises of gastronomic tourism of this state. The theoretical foundation concentrates on the context of tourism policy in Brazil and in the world, articulating with the strategizing, that it is immersed on Strategy-as-Practice (SAP) approach, taken it on this paper with focus on practices articulated in strategies and tactics of everyday life (Certeau, 1998). To take care the empirical evidences, the research received a qualitative nature, accounting with documental research, semi-structured interviews and non-participant observation as techniques to get empirical materials. These materials were analyzed with content analysis, on thematic modality. Like results, it comprehends that the strategizing related to tourism policy in the organizations focused in this study is intricate in arrangements of strategies and tactics of everyday life, around two praxis – the “grand meeting” and “the meeting of gastronomic pole of the mud street”; and that, actually, that strategizing connects it predominantly with the tourism policy identified: the gastronomic poles project
