Summary: | Cacao seeds price at farmers level in 2013 is IDR 800 per kg. Expected by
implementing technology cacao seeds be processed products such as cocoa powder can
increase added value for cacao farmers. From aspect of expected processing most cacao
must fermented with Indonesian cacao quality standard requirements in accordance with SNI
01-2323-2002 so that quality of cacao Indonesia can be accepted in international market.
Cacao seeds done after fermented cacao seeds for three up to six days and then final
selection of seeds will be used for making materials processed products cacao fruit.
Ingredients cacao seeds obtained from results of cacao farmers Sotok village sub-Sanggau
Sekayam. Cacao seeds done cacao processing plant “Gapoktan Lintas Sekayam”.
Assessment is done using cacao seeds into form of cacao products: fat cacao, pasta and
cocoa powder, to test processed products cacao seeds form level of water and level of fat in
accordance with standard of SNI. Based on results shows that cacao seeds product research
conducted by “Gapoktan Lintas Sekayam” not meet standard of SNI because still high level
of water cacao seeds so that quality of end product is low |
