The study has chosen Taiwan Provincial Tam-shui Vocational Senior High School and Beijing Jing-song Vocational Senior High School for their outstanding achievement and comparable condition in hospitality education. In Taiwan, senior vocational education of hospitality emphasizes on three fields: Chinese culinary, Western culinary, and Food & Beverage service; on the other hand, in the mainland China, Professional Chinese culinary, Professional Western culinary, and Hotel service are the three fields of emphasis. Therefore this research is to focus on the comparison of three fields: Professional Chinese culinary, Professional Western culinary, and Hotel service. The researcher has visited Beijing Jing-song Vocational Senior High School twice to collect relative information from series of interviews and seminars and compiled the data into the contents. The purpose of the study is to provide useful reference for hospitality educators of the Both Sides and the future progress. This paper is composed of seven chapters: Chapter one: Introduction: This chapter includes motivation, and purpose of study, research methods, scope and restrictions of the study, and definitions. Chapter two: Literature review: This chapter discusses hospitality education in the U.S.A., Japan, and Swiss. Chapter three: History and development of hospitality education of the Both Sides: Senior vocational education of hospitality in Taiwan has founded in Tam-shui Vocational Senior High School since 1985. Until now twenty-three public and private vocational senior high schools have established this department. On the other hand, in the mainland China senior vocational education began to develop in Shanghai, and in Beijing district senior vocational education started from Jing-song Vocational Senior High School in 1983. Now there are twenty-eight senior high schools have these relative programs available. Chapter four: Analysis of current senior vocational education of hospitality in Taiwan: This chapter introduces the educational environment of Tam-shui Vocational Senior High School and analyzes the curriculum, staff, and internship program of the school. Chapter five: Analysis of current senior vocational education of hospitality in the mainland China: This chapter introduces the educational environment of Jing-song Vocational Senior High School and analyzes curriculum, staff, and internship program of the school. Chapter six: Comparison of the senior vocational education of the Both Sides: This chapter compares the curriculum, staff, and internship program of the two schools, discusses the similarities and differences, and explains the discrepancies. Chapter seven: Conclusion and recommendation: This chapter proposes the author''s findings, views, and recommendations for the future researchers and the senior vocational educators of the Both Sides.
