Because the change of signals are not very apparent, the researchers indicate the queries of the data whether it can represent the things of be measured or not. Therefore, the conceptions of uncertainty had been developed. The purpose of this study was to calculate the uncertainty of standard rice that is served as the reference materials to evaluate the performance of the rough rice moisture meters. It is reasonable to limit moisture content tolerance of standard rice within 0.2%. The results of experiment indicated the mixing of water and rough rice are not equilibrate at a short time after the standard rice were manufactured. The standard rices for evaluating the performance of the rough rice moisture meters should be stored more than 8 days in the low temperature. Moisture content of standard rice can be equilibrated state and uniform distribution in storing tank. The uncertainty of standard rice is affected by it homogeneity, stability and instrument performance of balance. The largest uncertainty for standard rice is the sample with moisture content of 12% and 28%. The calculated value of uncertainty was 0.241%.
