Summary:碩士 === 中國文化大學 === 生活應用科學研究所碩士在職專班 === 92 === The research is to discuss the topic of sanitation-safety situation when I can observe and visit the manufacture process in the rice-vermicelli factory. To understand the present sanitation-management situation in the rice-Vermicelli factory, I schedule the evaluation from into “factory environm ent”, “factory establishment”, ”machine equipment”, “organizations pers- onnel”, “sanitation-management system & personnel sanitation management”, “Manufacture process management”, “quality control ”, and “others”.There are 8 items and total 116 questions. I pick up the research samples by random in 5 rice-vermicelli factories in Hsinchu City and 2 rice-vermicelli factories in Changhua County. The measure is in “excellent”, “good ”, “bad”, and “worse”. The total evaluation result is under “good” level. ”quality control” and “Manufacture process management ” tend to “good” levlevel. “factory environment”, “sanitation-management system & personnel sanitation management”, “others”, ”machine equipment”, and “factory establishment” are between “good” and “bad” level.“organizations personnel” is close to “bad” level. According to the research result, I make some suggestions. 1.The data is not enough in the rice-noodle factories in each city. This cou- ld could be the general evaluation in the factory and set up correct info- rmation. 2.The major produce way is semi-automatic manufacture in the rice-Verm- icelli factory and hand-making is more frequent on the manufacture pro- cess. It is better to research and develop automatic machines, control the pollution mediums, and reduce the injurious factors of the foods. 3.It is better to manage the rice-vermicelli factories step by step, and help them to accept the identification of CAS, GMP, and HACCP to improve the quality. 4.The major material in the rice-vermicelli product is not using enough. It can not be agreed by the rice-vermicelli national standard of CNS-11172.It should be improved immediately. 5.It is better to plan and design the education material of sanitation education in the rice-vermicelli factory to enhance the grade of health management. 6.We should continue to research the relative topics to improve the competition of this field, and more sure the safety of the products.
