Tilapia is processed into the high quality frozen fillet based on the tests of hygiene and safety, and renamed as Taiwan Tilapia’s frozen fillet. In addition, the market price of the fillet is superior to the frozen whole fish. Thus, there are a lot of industries to invest in the production of Taiwan Tilapia’s frozen fillet at present. The objective of this study was to develop a set of embryonic fillet mechanism to meet the demand of the industries for replacing manually holding the knife to fillet directly and avoiding the danger and hygienic problems. The physical data of all properties on Tilapia was also set up by utilizing the relevant tests of physical properties in this study. This fillet mechanism is a mechanical seat operated by hand for a person, and the whole weight is about 14 kilograms, including a horizontal clipping device, a fillet cutter, and an abdominal cavity support device. The target weight of Tilapia was 600 - 1200 grams. The Tilapia filleting recovery was about 30% with traditional manual operation, and was 29.2% for the prototype developed in the research. The average work time for the prototype was 43.6 sec / fish.
