The red pigment extracted from H. mediterranei (hmERP) was tested it’s antioxidant and decoloring activity. It is known that the cell membrane of H. mediterranei contains a red pigment, bacterioruberin, which is a derivative of C-50 carotenoids. Carotenoids are well known as the major antioxidant and nutrient for human being, and help to decrease the free radicals which are harmful to human body. We have examined four of antioxidant activity of hmERP: (1) the chelating effects on ferrous ions, (2) 2,2-diphenyl-1-picrylhydrazyl (DPPH) raical scavenging activity, (3) the reducing power and (4) the antioxidant activity in linoleic acid emulsion. The chelating effect of ferrous ions was measured as 35% at hmERP concentration of 1 mg/ml. The DPPH radicals scavenging activity was measured as 76.3% at hmERP concentration of 2 mg/ml. The reduction of potassium ferricyanide to the potassium ferrocyanide was significant at hmERP concentration of 4 mg/ml. The inhibition efficiency of conjugated double bonds was 97.2% at hmERP concentration of 4 mg/ml. The decoloring reaction of hmERP was measured by feeding to Cichlasoma citrinellum synspilum. After fifteen month feeding, Cichlasoma citrinellum synspilum grew from 5 cm to 10 cm. The surface of fish had no any symptom of shape mutation or growth of warts. Comparing to the control group (without feeding hmERP), fishes by feeding hmERP had obvious decoloring skin or albinism effect.
