碩士 === 國立暨南國際大學 === 歷史學系 === 95 === This Study deals with several problems of the system of great dinner in the Ming Dynasty: how was the court great dinner processed? How were ingredients acquired? How many abuses did it arise from the system? The great dinner system in the Ming Dynasty was processed by Guang Lu Si, Tai Chang Si, Shang Shan Jian, Shang Shi Ji an, Gueng Bu. Each organization was in charge of its position and responsible for its duties to process the system successfully. Because the great dinner needed abundant ingredients, there were several ways to get ingredients, including official production, Shang Gueng and buy from Pu Hang. China made the most of ceremony traditionally, therefore the celebration of the great dinner was highly related to the ceremony. There were different rules for the seating of atrendants, the dishes, the music and the dance. Though each organization should be in charge of its position and responsible for its duties and there were related rules to obey, there were still many abuses arising. For instance, being greedy for profit, being careless when holding great dinner and plethoric kitchen servant, all would induce lots of abuses.
