Results indicated that: (1) individual student’s learning motivation had a positive effect on his/her skill assessment; (2) in terms of the rate of passing professional assessments, students admitted to college outnumber those seeking a position in the job market after graduating from high school; (3) the students seeking jobs in hospitality industry after high school obviously obtained more professional certificates than those who targeted at other jobs do; (4) the students whose parents are service industry had more professional certificates than those whose parents are in other careers did; (5) the students majoring in Food & Beverage Management in regular vocational high schools obtained more professional certificates than those who major in Hospitality in cooperative vocational education programs did. This paper’s conclusions propose effective learning ways for the potential students in catering businesses to pass the professional assessments, accomplish the objective of vocational education and promote the practice of professional assessments.
