At present domestic quantificative burnout studies are large amount, and the most research belong to the ABC causes and effects pattern. They divide burnout concept into three construction surface, and they mostly use the same pattern to different participants . Although it make burnout research become broad, but it also become static. Therefore, this study explore with the qualitative research approach. I have conducted semi-structured interviews to interview four participants who are managers of food service chain-stores. The four participants were asked about their experiences on food service work. We can find that four participants’ burnout are atypical burnout research. In the past , burnout research told us that burnout come from working with people, and people brought emotional exhaustion. But we can find that four participants’s burnout come from environmental change. Different participants have different coping approach. And this study develop two modes that are 「expectation-reality」mode and 「demand/ resource」mode. And tow modes all developed by burnout process analysis.
