Several proteases, including alcalase, flavourzyme, esperase, chymotrypsin, trypsin, thermolysin and collagenase, were employed to produce the hydrolysates, respectively. Although collagenase-collagen hydrolysate had the highest percentage of MW less than 3,500 daltons among these hydrolysates, alcalase-collagen hydrolysate (ACH) was selected because of its much lower enzyme cost and the second high percentage of the small peptides up to 63.14%. ACH was further filtered by sequential or single membrane with 1-8 kDa(kilo-daltons) molecular weight cutoff (MWCO). The result indicated that ACH filtered by single 1kDa MWCO membrane could produce 100% of MW less than 3,500 daltons. An operation stability study showed that the membrane reactor system equipped with single 1kDa MWCO membrane could maintain a steady production of the hydrolysate for over 13 h. The molecular distribution of several gelatin related products in the market were also compared. The result indicated that the hydrolysate had much lower MW than all of the products and implied that the hydrolysate was competitive in the future market.
