Because people attach importance to health problem gradually, so functional food which improve human’s body is catching public’s attention gradually. Perilla is one of the Chinese medicinal herb. At present, perilla oil is on sale for health. Due to perilla oil have rich α-linolenic acid, it is one of the better health oil. According the literature pointed out that perilla seed extract is not only reducing the risk of inflammation and coronary diseases, but it also can be the role of inhibiting the cancer cells. This study is aimed to get the perilla seed extract by supercritical carbon dioxide extraction technology. In addition to perform the perilla oil quality (acid, saponification and iodine value) and RP-HPLC analysis, and find the effect of extraction operating condition. In the study, The experimental data was performed at pressure of 3000, 4000 and 5000 psi, and at temperature of 313, 323 and 333 K, and at drain flow rete of 3.5 L/ min. After extraction, the extract was all performed the oil quality and the HPLC quantitative analysis. According to extraction yield, carbon dioxide consumption, ALA yield and oil quality analysis find the best operating condition, and performed the extraction curve modeling to find optimum equilibrium parameter. The experiment result show that the condition at 5000 psi and 333 K has the best extraction yield and low carbon dioxide consumption; the condition at 5000 psi, 323 and 333 K have higher ALA yield. In high pressure and low temperature condition, low acid value, low saponification value and high iodine value of perilla oil have high quality. The extraction curve modeling show that the equilibrium parameter at 4000 psi and 323 K condition have better effect of the mass transfer.
