Summary:碩士 === 中國文化大學 === 生活應用科學研究所 === 97 === The purpose of this study was to investigate the difference of learning effectiveness and satisfaction in beverage mixology between multimedia computer-assisted instruction (MCAI) and traditional instruction. Based on the contents of national skill testing of bartender, the researcher developed MCAI in beverage mixology. The pretest-posttest nonequivalent group design of quasi-experiment research was used for this study. Two classes of freshmen students in food and beverage department of the vocational high school who studied beverage and cocktail preparation were recruited. Students were assigned to experimental group and control group to conduct an experiment two hours per week lasting for seven weeks. After experiment was completed, there was a posttest to evaluate student’s learning effectiveness. Besides, learning satisfaction would be tested by questionnaire and focused group interview. SPSS for windows 12.0 was used to analyze the quantitative data which included descriptive statistics, t-test and ANCOVA. The qualitative data in the research were inducted, coded and analyzed. The results are shown below: (1) The experimental group makes progress in scores significantly. However, there is no significance in control group. (2) There are no significance in learning effectiveness in both MCAI and traditional instruction. (3) Both the experimental group and control group are satisfied with the two different instructions. The level of helping students in learning Beverage Mixology is between helpful and very helpful.
