This study used a questionnaire survey based on a self-development “Related factors effect on choosing school lunch of students” questionnaire as a research tool, targeted on fifth & sixth grade students of Tainan County, Tainan City, Kaohsiung County, and Kaohsiung City as the research area to the proportion of cluster randomized sampling. Data analysis uses descriptive statistics, t-test, One-way Analysis of Variance, Scheff’e post hoc analysis, Pearson product-moment correlation and other statistical methods. The results showed that: in Southern Taiwan, fifth and sixth grade students’ nutrition knowledge of manifestation is passable; food preferences showed a more positive attitude; students indicate satisfied to school lunch and middle-to-high expectations to school lunch as well. In depth to make study of students when choosing school lunch within different background variables show: 1. There were significant differences on “nutrition knowledge” depends on matters of different cities, school size, school location, executing methods of school lunches, whether school nutritionist exists or not, whether the job duties of nutritionist to be fully understand, and the social-economic status of parents. 2. Regarding to the “food preference”, the results will be different according to different cities, school location, executing methods of school lunches, whether school nutritionist exists or not, whether the job duties of nutritionist to be fully understand, and the social-economic status of parents. 3. To the results of the “school lunch satisfaction”, effective reasons are differentiation of cities, school size, executing methods of school lunches, and whether the job duties of school nutritionist to be fully understand. 4. There are several reasons may cause the significant different results of “the expectations of school lunch”, which are: whether school nutritionist exists or not, and if the job duties of nutritionist to be fully understand. However, there were no significant differences of results from different gender or grade children in all dimensions of “nutrition knowledge”, “food preference”, “satisfaction with school lunch”, and “expectations of the school lunches.” In addition, results show that the preference of fifth and sixth grade students might be the key factor which effect school to choose lunch in Southern Taiwan. At the end, based on the results of this study, recommendations can be made to education related organizations and schools in order to improve the elementary school lunch providing plans and reference for the follow-up study
