However, it was influenced by the dietary culture of aborigine of Maya and Aztec the most and became the main characteristic of Mexican food. Generally, people’s first impression of Mexican food is peppery hot. In fact, this food habit is originated from the aborigine. In the period of Maya and Aztec, the aborigine changed their resident place constantly for searching food. Until developing the agriculture, they settled down. Due to the diversity of plants, animals and other eatable sustenance on their land, they make delicious and traditional food by using these limited food resources which result in developing various cooking appliances for making different foods. In the mean while they also developed the trading culture. The development of trading culture was resulted from extensive land where people in different area have different edible sustenance, and produce various food. Therefore, the market is coming into existence for people to trade for what they need. As time goes by, the food combined with religion and culture and gradually developed their unique traditional dietary culture. However, modern Mexico dietary culture still can not be separated from the diet habit and traditional food in the period of aborigine. It’s common to find out that a lot of sustenance using in the Mexican food are also using by the aborigine. The Mexican uses these aboriginal sustenance and the sustenance from other countries to display the different and distinctive Mexico dietary culture. The research theme is “Mexico dietary culture and aborigine” with three chapters. In the first and second chapter is discussing about the dietary culture of aborigine of Maya and Aztec. In the third chapter is discussing how the dietary culture of aborigines deeply influences modern Mexico dietary culture.
