The clinical effects include the promotion of blood circulation, anti-bacterial, anti-inflammation, lower down cholesterol, modulate blood sugar and anti-tumor. This study focuses on the essential oil composition of Alpinnia officinarum rhizomes, pungent purification, antioxidant capacity and the effect of pungent in hamsters’ plasma lipid. 1. The essential oils were extracted out of the rhizomes by steam distillation, the yield was 0.14%, the oils had been identified the compounds grouped by the analysis of GC-FID and GC-MS. The order of the results of content analysis are : sesquiterpene hydrocarbon 31.03%, oxygenated monoterpene 27.08%, oxygenated sequiterpene 21.85%, monoterpene hydrocarbon 13.83% and other volatile compounds accounted for 0.16%. The main components were 1,8-cineole 20.91%, 4-allyphenyl acetate 12.5% and Alpha-pinene accounted for 7.29%. 2. The pungent ingredients were purified from Alpinnua officinarum rhizomes and the investigation of its stability. The substances contained in the pungent found from the result was galangal acetate (1’-acetoxychavicol acetate), the dry weight yield was 3.26%. The galangal acetate had material instability in aqueous solution. When the experiment was performed in the high temperature and acidic condition, it was easily cracking to chavicol, 4-acetoxybenzaldehyde, aceteugenol, 1’-hydroxychavicol acetate, dihydrogalangal acetate, 1’-acetoxycinnamic alcohol and p-coumaryl diacetate and other compounds. Out of these substances the1’-hydroxychavicol acetate, 1’-acetoxycinnamic alcohol and p-coumaryl diacetate were the main products of pyrolysis. The proportion was about 30%. Relatively it was more stable to be stored in the alkaline environment or lower temperature. 3. The antioxidant activity was evaluated when Alpinnia officinarum rhizomes extracted in different solvent. The substance extracted in the same concentration (1 mg / ml), the methanol extraction had a higher DPPH scavenging capacity of up to 98.9%; followed by ethyl acetate extraction was 93.4%; and there was 60.1% scavenging ability from 99% of galangal acetate . When scavenging superoxide anion, methanol extraction capacity was up to 99.4%, there were 89 to 99% scavenging ability in other solvents. It had shown that alpinnia officinarum rhizomes have good antioxidant activity from the above research. 4. The lipid composition of male hamsters was influenced by purified pungent of Alpinnia officinarum rhizomes of galangal acetate. The test was performed for 10 weeks with different group of concentration of galangal acetate in high fat high cholesterol diet, there were 10ppm (GA10 group), 100ppm (GA100 group) and 1000ppm (GA1000 group). The results had shown that total cholesterol (TC) and triglycerol (TG) level had been reduced gradually with the higher dose served (P <0.05), there was no difference between the experiment and control group (C) (P> 0.05), however the HDL and LDL were without difference from high fat high cholesterol diet (H) (P> 0.05). From the tests, it had approved that plasma lipid levels in TG and TC of hamster could be reduced when adequate galangal acetate was fed.
