Summary:碩士 === 國立彰化師範大學 === 工業教育與技術學系 === 99 === The purpose of this study was to understand the adequacy of the Chinese cooking skill qualification of the existent trade in Taiwan. For this purpose, we explore the content of Chinese cooking skill qualification first and preparation the Delphi technique questionnaire of Chinese cooking skill qualification content based on the results of literature review. This study used Delphi technique to investigate for 18 experts. Finally, this study gets the conclusion through data analysis. 1.The content of Class C Chinese cooking skill qualification have six items, including test specification . 2.The sub-standard of Class C Chinese cooking skill qualification have eleven items, including ethics. 3.The index of content in Class C Chinese cooking skill qualification have one hundred twenty-two index, including professionalism.
