Cordyceps militaris, as Cordyceps, has a unique chemical composition, and therefore have a health effect. This study was aimed to evaluate the vitro-antioxidant activities and its physiological activitues of the water extracts from artificial cultured Cordyceps militaris with nine nitrogen source (100% soybean meal, 25% bee pupa powder, 50% bee pupa powder, 75% bee pupa powder, 100% bee pupa powder, 25% silkworm pupa powder, 50% silkworm pupa powder, 75% silkworm pupa powder, 100% silkworm pupa powder,) . The results showed that when C. militaris BCRC32219 with the nitrogen source of 25% silkworm pupa powder, the highest amount of total phenolics (1043.30 ± 14.58 ppm, as gallic acid); C. militaris LS901 the nitrogen source of 75% bee pupa powder, the amount of total phenolics was 808.87 ± 15.43 ppm (as gallic acid), which was the greatest ; and C. militaris LS902 with the nitrogen source of 100% bee pupa powder , the highest amount of total phenolics (828.74 ± 14.75 ppm, as gallic acid). The greatest amount of Cordycepin in these three strains with the nitrogen source of 100% soybean powder. The in vitro antioxidative activities assays include anti-lipid peroxide fields, DPPH radical scavenging effect, ferrous metal ion chelating power, reducing power; the all extracts of three strains obtained their abilities depended strongly on their concentrations at the ferrous metal ion chelating power and reducing power. All the extracts exhibited lipid peroxidation which were equivalent to the BHT. The all extracts reached more than 80% of DPPH radical scavenging effect at high concentrations 3 mg/ml. These results showed that all extracts obtained antioxidative abilities.
