The study was divided into two portions. First, researchers investigated whether elementary school students from various backgrounds differ in knowledge, attitude, or behavior with regard to nutrition, and whether a correlation exists among the three. Second, we gauged the perceptions of parents towards the nutrition behavior of their children and their satisfaction with the nutrition education provided at school. Furthermore, we attempted to determine whether the perception of parents has an impact on satisfaction by identifying a number of predictive factors influencing the satisfaction of parents with the nutrition education provided at school. The subjects of this study included students from the fourth, fifth, and sixth grades in an elementary school in Taipei City as well as their parents. We employed purposive sampling, and valid questionnaires were obtained from 297 students and 289 parents. Reliability analysis, factor analysis, descriptive statistics, one-way ANOVA, Pearson's Correlation, and stepwise multiple regression were employed to analyze the questionnaires. We arrived at the following conclusions: 1. The overall performance of the elementary students with regard to knowledge of nutrition was above average; however, attitudes and behavior related to nutrition were below average. 2. Gender, grade, socio-economic status, and the frequency of eating out all had a significant influence on the knowledge, attitudes, and behavior of students toward nutrition. 3. The attitude and behavior of elementary school students toward nutrition are positively correlated. 4. The grade of the children, education level of parents, the occupation of parents, and the number of times meals are cooked at home have a significant influence on a perception of parents toward the nutrition behavior of their children. 5. The gender of parents, the grade of the children, occupation of parents, socio-economic status, and the number of times meals cooked at home have a significant influence on the satisfaction of parents towards the nutrition education provided at school. 6. The overall perception of parents with regard to nutrition behavior was below average; however, their satisfaction with nutrition education provided at school was above average. 7. The perception of parents with regard to the nutrition behavior of children has a significant influence on the satisfaction of parents towards the nutrition education provided at school. 8. The perception of parents regarding their children’s general eating behavior, nutritional intake behavior, eating learning behavior, and overall nutrition behavior are significantly predictive of their satisfaction with the nutrition education provided at school.
