Some farmers from the NCHU organic farmers’ market were invited to be farming instructors in building school garden and practicing students’ cooking skills. This study aimed to investigate the changes of students in terms of agricultural literacy and dietary habits after food and farming education courses. The data were collected by one-group pretest-postest design and was analyzed by paired t test to compare the outcomes of students agricultural literacy and dietary habits before and after the program. Field observation records, and students’ learning evaluations were also gathered to assure the integrity of data. It was found that students’ agricultural literacy in agricultural knowledge and attitude were significantly changed after food and farming education program, whereas agricultural behavior exhibited no significant difference. For dietary habits, there were no significant differences in dietary attitude and dietary behavior, while dietary knowledge presented significant difference. It could be briefly concluded as the following: 1. Food and farming education program generally presents positive effects on the students’agricultural knowledge and food knowledge. 2. Students show gradually improved knowledge, attitude and behavior toward agricutlrue and food habits. 3. With hand-made process, students were more willing to try different foods and gradually change their dietary behaviors. Shih-Jui Tung 董時叡 2015 學位論文 ; thesis 116 zh-TW |
