Secondly, it is to find the core competence of Food & Beverage Hospitality Industry. The final purpose is to present the key factors to enhance the internationallized hospitality and service education from the perspectives of overseas workers. This study adopts purposive sampling and depth-interviewing with six students who had graduated from a hospitality and tourism university in Taiwan. These students who have been work in Canada, Singapore, Macao, Japan, Hong Kong and Dubai for at least one year, respectively. The result of study will be written by Thematic Analysis. According to the research, the motivation of overseas workers definitely influences their work performance. The overseas workers abandon the rigid values and build a new multicultural worldview through cross-cultural life adaptation. Another finding is the incompetence of language may cause misunderstanding between colleagues and indirectly affect interpersonal relations and work effectiveness. Besdies, in terms of professional skills, what really challenge the overseas workers is the variation of food, eating habits and lifestyle. In conclusion, the motivation of overseas workers will affect their life adoption and new culture adjustment. And their new life adjustment will affect their performance and effectiveness of works. This study summaries that the important core competences of working skillls in Chinese kitchen are recognition the food, organization of work, cutting skill, pastry and cooking skill. As a restaurant manger, it’s impernant to be capable of food cost control, food sanitation and safety and restaurant However, restaurant service and English conversation skill are important for the overseas workers who need to serve the customers. In addition to the professional skills, good communication skill, team work capability as well as emotional management are the decisive factors to influence the performance of work overseas.
