But in addition to the large number of competitors, no doubt the relevant operators have to confront many tough challenges due to rapid changes in the business environment, such as the economic downturn, rising costs, the high turnover of human resources, food safety concerns, low birth rate, an aging population, enhancing healthy dining concepts and tastes of the public, etc. This study aimed to explore the business model innovation of Thai foodservice business in Taiwan. By reviewing the literature and Internet information for the existing business models, and by in-depth interview to experts and consumers for the relevant business management perspectives and perception of the service quality of Thai style foodservice respectively, it is found that innovation and consumer experience are the most significant key success factors other than pricing and tastes, an innovative business model was therefore proposed. While starting a new business is no easy task, keeping it going is even harder; failing to keep move with the times and being unable to innovate, where the success of the rivals’ innovative business models lie may also be the crux of one’s failure.
