Summary:碩士 === 亞太創意技術學院 === 文化創意設計研究所 === 104 === A great dish needs not only color, aroma, and taste, it must also satisfy a gourmet’s tongue and furthermore present a visual feast. In fact, with ingenuous creativity, a chef can turn an ordinary cuisine into a high-class dish. Creative cuisine, namely, is the transformation of existing recipes using new, creative ideas to please a modern generation of connoisseurs. This research will provide an introduction into the tools of the trade: knife skills, steamer, stove, and plating art. The five criteria of Chinese cuisine: color, aroma, taste, shape, and meaning will also be explained to complete the overarching culinary philosophy. Next, three dishes will be selected as samples to analyze the plating art techniques employed. Similarly, three food carving techniques will be explored and demonstrated. Lastly, to show the author's professional competence, awards achieved by author in international culinary contents will be attached. Drawing inspiration from vast years of experience, the author has invented five creative dishes: "Love for Lobster Wrapped in Thousand Threads", "Grand Duke Jian Fishing", "Chinese Water-Braised Beef", "Entire Town Awaiting the Golden Castle", and "Five-Colored Kirin Balls". These dishes will be documented with detailed images and captions to explicate the different layers of creativity. The author wishes that through this research, the advancement of culinary techniques and the art of plating can push the boundaries of creative cuisine and serve as future references for aspiring chefs.
