However, the researchers pointed out that the presence of significant individual differences in food preferences under depressed emotion (Christensen & Brooks, 2006). In addition, there is an important relationship between the neuroticism and impulsive personality traits were associated with eating behavior (especially eating disorders). Therefore, the present study was to investigate the influence of emotions and personality traits eating preferences. Pre-test study, to investigate the Taiwan students eating taste preferences representative to the web as a platform for surveying. Thre are five eating taste : sour, sweet, bitter, spicy and salty. There are 147 questionnaires were collected. The results showed that among five flavors, received a total of 1029 kinds of food, the most commonly nominated elected every taste 10 kinds of food, as food tastes preferences experimental test of the material. In formal study, there are 127 undergraduate’s participants. After the participants filling in forms of characteristic scales, they were manipulated with positive and negative emotions, and then they took the tests of food preferences to evaluate their eatnig preferences, we found that the positive correlation of melancholy and sweets preference reached the borderline significant level in this research. As for the personality traits, neuroticism personality can regulation the relations between emotion and sweet-taste preferences, and the urgency personality traits can regulation of emotion and taste preferences include sour and salty taste preferences. In addition, in this research, we found that female prefer to sour taste foods more than male. On the opposite side, male prefer to salty taste foods more than female.
