Night markets provide an unforgettable multicultural gastronomy experience to consumers by serving traditional Chinese food and international cuisines. This diverse and creative dietary style reflects Taiwanese “food-centric” culture. However, consumers also complain about negative aspects relate to night markets, e.g. filthy surroundings, uncovered left-over food, open sewage, traffic jam, parking difficulties, and detrimental impact on the environment. These negative impressions are caused by most night market vendors use primitively equipped stands. Contrast to the traditional food stand; food trucks provide better and more sanitize food and dining condition than traditional food stands and has become a booming mobile dining trend in Taiwan. However, the food truck is a newly developed business model in Taiwan. Currently, there is no law or policies that can fit its operations; therefore, food truck operators are not qualified for applying for legal Mobile Food Stand Permits of any kind under current laws. Although they provide better and more sanitize dining condition than traditional food stands, there are frequently inspected, ticketed, and fined by policies and food inspectors. This study aimed to investigate the feasibilities of introducing food truck to Taiwan’s there are night markets to improve the market environment. The study utilizes literature analyses, personal interviews, in-depth investigation of the characteristics and trends of Taiwan's night markets, and the impact of the food truck operation on the environment. Based on the outcome, we propose an action plan to improve night market environmental quality and to analyze the feasibility and impact of setting up a food truck operation area in night markets to create a new night market operation model.
