It is also a critical period for physical development and knowledge acquisition. As school lunch plays an essential role in the growth of teenage students, it is the best way to advance the diets of teenagers and their nutrition knowledge through school lunch. Therefore, the aims of the study were to understand the current satisfactional level of school lunch of senior high school students and their nutrition knowledge, and to understand the differences between students from different backgrounds on their satisfactional level of school lunch and nutrition knowledge. The survey of the study was conducted with questionnaires on students from a vocational high school. The analysis of the collected data was performed with Descriptive statistics, Independent-Sample t-test, One-way ANOVA and Pearson correlation, etc. The results showed that the overall score of the level of school lunch satisfaction averaged 3.37. The students expressed the highest satisfactional level of school lunch with hygiene and cleanness as well as its attached service, while they expressed the lowest satisfactional level of with the school lunch menu (the variety of meals) and the cooking (the greasiness of food). In terms of the nutrition knowledge test, the chance of getting correct answers averaged 71.2%, where more students got correct answers on general nutrition knowledge than on balanced diet (including weight control), nutrition and diseases, and food hygiene and safety (including food labeling). As the results of the analysis of variance have shown, there were significant differences on the satisfactional level of school lunch among students who are varied in grades, self-awareness in health, body shape and the importance of body shape maintenance, satisfactional level of body shape, as well as in the time they spent on 3C devices. There were significant differences on nutrition knowledge among students who are varied in gender, self-awareness in health and the importance of body shape maintenance, weekly allowances, the time spent on 3C devices, breakfast habits, as well as in their fathers’ educational status. The results of the correlation analysis demonstrated that there was no significant correlation between the satisfactional level of school lunch and nutrition knowledge. The results and suggestions in this study are provided for the school and the contractors as a reference in the hope of bettering school lunch quality and nutrition education. 顏國欽 2016 學位論文 ; thesis 115 zh-TW
