Many chain-restaurants prefer to have set menu for their customers to simplify the operation and expand business rapidly. Set menu designing in the restaurant has to satisfy both customers and the owner. Accordingly, the Techniques which are called SMARTS and SMART-ROC for designing set menu are applied in this study. Data mining and multi-criteria decision analysis are combined to search the complete set menu for the case studies of band chain restaurants in Taiwan. Customer consumption data were analyzed and classified into four categories from high to low levels based on association rules. SMARTS and SMART-ROC were then used to choose the meals for the set menu. Experimental results indicated that overall SMART-ROC performed better than SMARTS in terms of both objective and subjective values. Data mining and multi-criteria decision analysis developed a set menu designing process, which generates positive results and is perfectly in line with customer preferences to enhance service performance.
