In order to achieve the maximize extraction of antioxidants from Chenopodium formosanum seeds, the process factors, such as ethanol concentration (0-100%), extraction time (30-180 min) and temperature (30-70℃) on the extraction of the bioactive contents, as well as the antioxidant capacity, are evaluated by using response surface methodology (RSM). The central composite design (CCD) was applied and the total phenolic content (TPC), total flavonoid content (TFC) and antioxidant capacities (DPPH, FICA, FRAP and ABTS). ANOVA analysis results showed that the ethanol concentration affects the response variables to a very significant, followed by the extraction temperature. Furthermore, the pseudo 2nd order kinetic model provides the best fit to the experimental data. Moreover, the results of the thermodynamics showed the Chenopodium formosanum seeds extraction to be feasible, endothermic, irreversible and spontaneous.
