Research structure was based on Ajzen’s Theory of Planned Behavior (TPB). Four dimensions, using attitudes, subjective concepts, cognitive behavior control, and acceptance degree were used to help construct the acceptance structure. Subjects of this paper were the middle-aged and elderly residents living at Shueli Township, Nantou County. A total of 270 valid samples from 300 questionnaires were collected and analyzed by descriptive statistics, independent t test, one-way ANOVA, and Pearson Correlation. Moreover, SPSS 22.0 for windows was utilized to computerize data disclosing the factors that influence acceptance. Results showed that (1) health conditions and the variable that whether using plum essence are significantly differentiated in using attitudes, cognitive behavior control and acceptance degrees; (2) gender and health conditions are significantly differentiated in subjective concepts; (3) the middle-aged and elderly users and their acceptance of plum essence as dietary supplement are positively correlated and among which cognitive behavior control has the highest correlation. Based on the findings, this study hence suggested that related organizations should promote plum essence with strategic plan to sell the local produce. More importantly, it is anticipated that preventive medicine and the new choice of dietary supplementary may benefit the middle-aged and elderly users.
