This studied advantage The Kaohsiung No. 8 (KH8)and Kaohsiung No. 9 (KH9)species to explore secondary metabolisms such as saponin, anthocyanins and total flavonoids in the seed coat of red bean under various conditions of different varieties, soaking time, cultural and drying temperature. The content of glucoamylase was changed, and further, the solvent extraction was used to investigate the change of angiotensin-converting enzyme (ACE) activity. The results have confirmed that the red bean seed coat extract has good ACE inhibition ability, and the ultrasonic treatment can effectively improve the effective ingredient extraction and Ace inhibition effect, Saponin content of the KH8 seed coat 32.19 mg/g increased 17.8%, Anthocyanin 14.88 mg/g increased 748.29%, Flavonoid content 13.04 mg/g increased 29.84%, content of Saponins was the highest, the rate of increase was the highest Anthocyanin, Ace inhibition rate was 68.26%,IC50 = 29.52 mg/ml. Therefore, the future can be directed towards the extraction of different red bean seed skin, a further step forward to explore the improvement of ACE inhibition effect.
