碩士 === 國立臺南大學 === 文化與自然資源學系臺灣文化碩士在職專班 === 106 === Sesame is widely naturalized and long cultivated, one of the oldest grown oilseeds, since 3500-3050 BC in Indus and Ancient Mesopotamia. Sesame made its way as a passenger on human travels throughout the Asia and Africa. It was spread to China by the 2nd century BCE and to Taiwan by Han immigrants during Min Dynasty. People use the seed of sesame in diets as a source of protein, for flavor enhancement in many prepared foods, for the fine quality of cooking oil extracted from its seeds, its health benefits and many other uses. With the wide adaptation of sesame to many climatic and edaphic situations, the Han immigrants in southern Taiwan are used to cultivating it until now. However, the WTO rules highly reduce the domestic production of sesame. Only less than 5% consumption of sesame comes from Taiwan; the others are imports. In addition, the main areas of domestic sesame cultivation are concentrated in Tainan, generating the culture of sesame industry. The thesis focuses on the development and transformation of sesame industry in Tainan from 1950 to 2016. It turns out that the changes of natural environment, agricultural policies, population structure and consumer attitudes would reflect the transformation of production process, farming lifestyle, agricultural equipment and sales model of sesame industry.
