Result shows that the ethyl acetate soluble fraction exhibited the highest antityrosinase activicity and melanogenesis inhibition activity in zebrafish. Among the subfractions of ethyl acetate soluble fraction, subfraction E7 possessed the best antityrosinase activity, and the inhibition mechanism were both competition type whether using L-tyrosine or L-Dopa as the substrate. Results from the antityrosinase assay demonstrate that mearnsetin possessed the highest inhibition activity amony the compounds of subfraction E7. In the enzyme kinetic analyses, gallic acid, mearnsetin, and myricitrin were the competitive inhibitors, and myricetin was the mix-type inhibitor against tyrosinase whether using L-tyrosine or L-Dopa as the substrate. The melanogenesis inhibition activity in zebrafish of compounds examined was in a decreasing order of mearnsetin > myricetin > myricitrin > gallic acid. According to the results, E. serratus leaf extract and its compounds have good effects on the antityrosinase activity and melanogenesis inhibition activity in zebrafish, and are of the potential to be used as the skin whitening agent. 張惠婷 2018 學位論文 ; thesis 78 zh-TW
