Description
Summary:碩士 === 明道大學 === 企業管理學系碩士班 === 107 === With the change in diet and the pursuit of health and wellness, the global community is beginning to pay attention to the importance of food safety. The food industry is an important industry in daily life. However, with the advancement of technology, food technology has flourished and food safety has become an important item in the food supply chain. This study takes an agricultural product factory of a farmer's association as an example.First, through the literature review, we understand the origin and purpose, architecture and verification process of the HACCP food safety management system. Then, through the in-depth interviews of qualitative research, the implementation of the food safety management system of the farmers' association after the introduction of HACCP was discussed. The study found that in the HACCP system, internal communication and external communication play an important role in the entire supply chain in order to ensure the safety of various food materials, reduce the occurrence of various food hazards in the processing process, and produce products without food safety concerns. In addition, most farmers have different management and awareness of food safety management systems, which may also increase the risk of food safety incidents. The farmers' association needs to strengthen the education and training of farmers in the food safety management system to reduce the occurrence of food safety incidents.
