The results of effective ingredient and various cosmetic analyses for those three types of liquid black natto are summarized as follows: 1)They all contain 16 types of amino acids including nine essential amino acids based on the acidic hydrolysis; especially, Fermented I has the highest contents of amino acids. 2)They all contain polyphenols, flavonoids, and anthocyanins; especially, Fermented III possesses the highest amount of those three components. 3)They all can accelerate the formation of dopachrome, which indicates the formation melanin can be promoted; especially, Fermented I demonstrates the highest effectiveness. 4)They all can absorb the UV-light in the ranges of UV-A and UV-B; especially, Fermented III demonstrates the most effectiveness. 5)They all have the excellent moisture maintenance to decrease the dehydration of skin; especially, Fermented III has the great effect on this. 6)They all have high antioxidant activity based on the DPPH radical scavenging test, the reducing power determination, and the chelating of Fe2+ ion. Among them, Fermented III has the great DPPH radical scavenging effect and reducing power, and Fermented I has the strongest chelating of Fe2+ ion. 7)They all can inhibit the growth of Propionibacterium acne, and MIC for Fermented I, Fermented II, and Fermented III are 3.125 mg/ml, 6.250 mg/ml, and 3.125 mg/ml, respectively. 8)They all demonstrated the high stability while 1.0% liquid black natto was mixed with lotion, cream, and mask; respectively, based on the cosmetic stability tests such as high temperature, low temperature, room temperature, circulating temperature, and UV light irradiation. Therefore, readily prepared liquid black natto can be employed to the skin care products since they have various functions such as UV-A and UV-B absorption, antioxidant activity, antibacterial activity for Propionibacterium acne, promoting the formation of melanin, high moisture maintenance, etc. Particularly, Fermented III was the most valuable candidate on the skin care. none 梁偉明 2004 學位論文 ; thesis 142 zh-TW
