And find the correlation and influenced factors in knowledge, attitudes and practice of food sanitation. To process the statistical analysis of the research, percentage, average, ANOVA, Pearson product-moment correlation and regression were adopted. The exploration of the study reveals the following results: 1.The average score of the food sanitation knowledge section is 72.2%. The best grade is about foodborne illnesses knowledge, and the worst is purchasing and storing food. On the sanitation attitude, the average score is 88.5%. Attitude of caring for food sanitation is best, and attitude of seeking new sanitation knowledge is the worst. The food sanitation practice’s average score of the is 88.9%. Serving and cleaning sanitation is the best section, and manufacturing process is the worst. 2.There are many different variables have correlation with staffs’ knowledge, attitudes and practice of food sanitation. Knowledge: seniority, on-the-job training, chef license, sanitation management, and technical personal license. Attitude: sanitation checking form. Practice: on-the-job training, sanitation checking form, and technical personal license. 3.The correlation among food sanitation knowledge, attitude and practice hold positive relations in pairs. 4.Chef license has the best influence in food sanitation knowledge, the next is sanitation management. The best influence factor in food sanitation attitude is sanitation checking form.
