To cope with this trend, different kinds of restaurant are popping-up in the foodservice market, and buffet style restaurant is one of them. However, buffet style restaurants might promote customer’s overeating behavior and, as a consequence, creates some unique problems such as population overweight and increase amount of food waste. The purpose of this study was to investigate if providing consumers with a general dietary guidance or impose a cash punishment policy on customers for not finishing their food on the plate would reduce customers’ plate waste in a buffet style restaurant. The experimental method was employed in this study.The plate wastes of 581 customers were weighted during the three-week study period, which are control week, dietary guidance week, and cash punishment week. The plate wastes were categorized into five groups: grains, protein, vegetable, fruit, and dessert. Each Category was weighted separately at the end of each study days. The results showed that the average plate waste for customers was 94.35g. The average plate waste for dietary guidance week was 93.09g. However, the average plate of cash punishment was 41.16g. These results suggested that the amount of plate waste could be reduced for over 50% if the restaurant has a cash punishment policy. Therefore, consumer’s plate waste might not be influenced by providing dietary guidance, but would be affected by cash punishment.
